  1. Take 2 Fresh Tomatoes or Mixed Baby tomatoes for extra colour

  9. Prepare Melted Butter (or alternative)
  10. Take Salt if required (don't forget that Olives can be salty)
  11. Take 1 tbsp Capers (Optional)
  12. Get Chopped or flaked Chilli (optional)
Instructions to make Mediterranean Turnover:
  1. Chop all ingredients up finely and combine.
  2. Layer your filo pastry on a board (preferably on greaseproof paper as it will be easier to move). You will need about 6 Layers, use an oil brush to brush the melted butter (or alternative) onto the filo pastry between layers.
  3. Place the Vegetable Mix (you might not need it all) on one side of the filo pastry and spread the sauce (or Pesto) onto the other side, leaving room for crimping (leave about 1 inch).
  4. Dampen the edges with water, then fold the sauce side over the Vegetable Mix. Push the pastry together and crimp the edges.
  5. Place onto a baking tray (lined if it's not already on paper). Brush with milk or egg and place in the oven on 180 for 15mins or until pastry is crisp and browned. Allow to cool slightly and slice into portions.
  6. Serve warm or cold with salad. And sweet potato fries.
