Usually when I make paneer at Whey water contains protein and some other essential nutrients for the body. You can use whey to soak lentils. Since I only get a few lemons at a time on my greenhouse lemon tree and don't get out to the grocery store very often, I wanted to find some other tasty acid source to use to flavor and coagulate the cheese.
